Introduction: Green Chile Potato Taco
We made these tacos in Home Ec many years ago. My sister and I continued to make them for our family when the kids were living at home and it has been one of our favorite recipes. We don't make them very often anymore but, every now and then I will make them to satisfy my craving. This recipe is perfect when you have leftover hamburger and mashed potatoes. Follow through and let's make some green chile potato tacos.
Step 1: Ingredients and Utensils
2 Cups cooked hamburger
1-2 cups mashed potatoes
Corn tortilla shells
1 Can diced green chile
Oil for frying.
Tabasco sauce is really good with these.
Garnish optional
You will also need a frying pan, sauce pan, tongs,plates, and paper towels.
Please note: If you are cooking the hamburger from scratch use taco seasoning to flavor the meat. My daughter likes hot chile peppers, cilantro, and avocado with these.
Step 2: Hamburger and Potatoes
Re-heat the hamburger and potatoes
Add diced green chile to the mashed potatoes and stir
Step 3: Set Up Work Station
Place corn tortillas on a plate next to the skillet.
Add oil to the skillet and turn the heat to medium to medium high, watching closely.
Tear off several paper towels and place one towel on a plate next to the skillet for the fried tortillas.
As you fry the tortillas place a paper towel between each layer to absorb the excess oil.
Step 4: Fry Tortillas
Fry the tortillas and place them on the paper towels.
You can fry the tortillas soft and fold them over for a soft taco or fry them crisp to make a tostada type taco.
Step 5: Load the Taco Shells
Load the fried tortilla shells with the potato and hamburger, and garnish (optional)
Step 6: Sunshiine's Final Thoughts
Just for kicks I loaded one tortilla shell with the potato and hamburger and folded it so I could deep fry it. I also made a tostada out of one. We liked all of them. This recipe works great for a quickie meal. Enjoy!

I've never been a fan of the whipped style of mashed potatoes, it's a consistency thing but I do like a country or rustic mash. I've never considered using mashed potatoes like this but it sounds really tasty. The green chilies in the potatoes sounds really good by itself, perhaps fried like a potato cake.
