Introduction: Healthful Mint Chip Ice Cream (vegan)
Yes, you read correctly. Healthful ice cream. After experiencing this delicious ice cream, I wonder why all ice cream isn't more healthful. Why does ice cream have to have such a bad reputation? Why does ice cream have to have so much sugar and so many additives that one can barely pronounce the ingredients on the label. Well, I would like to give ice cream a makeover for this new time of health conscious folks who would still like to enjoy a tasty frozen treat with the added benefits of sneaking in healing ingredients.
In this particular recipe, I have chosen thyroid and hormone health boosting herbs and roots
Step 1: Ingredients and Equipment
1- 14 oz can Coconut milk, or about 1 3/4 cup
1/4 cup Water
2 cups Raw Cashews, soaked for 30 minutes and drained
6 Tablespoons Maple syrup, add less or more depending on your taste
1/2 teaspoon Peppermint extract
1 teaspoon Spirulina
1 Tablespoon Ashwagandha powder
2 Tablespoons Maca powder
2 pinches Sea Salt
1/2 cup Mint leaves, lightly packed
2 Tablespoons Cacao nibs
Blender
Ice cream maker
Step 2: Cashews
Be sure to soak the raw unsalted cashews for a minimum of 30 mintes.
Drain well
Step 3: Directions
Blend everything in a blender except 1/2 the fresh mint leaves and cacao nibs until very well blended
Step 4: Con't
Add the rest of the fresh mint leaves and cacao nibs and pulse a few times just to combine
Step 5: Cool Mixture
Transfer the batter to a bowl, cover it and refrigerate 1-8 hours or freeze for 45 minutes, until well chilled
Step 6: Making the Yummy
When batter is well chilled, pull out the ice cream canister from the freezer and empty batter into canister.
Process according to what your individual ice cream maker suggests, usually about 10 minutes or until thick and creamy.
Step 7: Enjoyment
Serve immediately or freeze for later. If frozen, thaw at room temperature for 10 - 15 minutes.

Wow! This looks delicious! I don't have maple syrup and it is a bit hard to get by where I live. What are your thoughts on substituting the maple syrup with honey?

As far as I know, the results should be the same. Of course, I assume the health benefits would be different. :)

What if I don't have an ice cream maker? Could I just leave it in the freezer until it hardens?

I have tried freezing ice cream without an ice cream maker, and you must stir it a lot while it freezes – every 30-60 min. But still, it does not get as creamy as if it was done with an ice cream maker – but it is possible!
