With my new healthy goals of eating right I have stopped buying junk food. So when it was time for the Sunday potluck I wasn't sure what to bring. I didn't have the ingredients to make my cute sugary frosting creation cupcakes but I did have plenty of strawberries and granola! It's possible to make healthier desserts and still have taste! You can make it happen. If you are looking for more ideas keep an eye on me because I'm just getting started! Ingredients 2 cup whole wheat flour 3/4 cup brown sugar 1/2 teaspoon salt 2 teaspoon baking powder 1 cup vegetable oil 1 egg 1/2 cup milk 1 cup granola chopped 1 cup strawberries chopped Ingredients for frosting 1 container fat free cool whip 1 package sugar free fat free vanilla pudding 1 cup vanilla almond milk 1 cup strawberries sliced https://m.facebook.com/FocusFitnessGroup

Step 1: Prep and Start

Pre-heat oven to 350 degrees Prepare cupcake pan with papers. In a large mixing bowl, combine the dry ingredients and whisk to combine.

Step 2: Mix Dry and Wet

Mix liquid ingredients into dry ingredients and stir. Fold in 1 cup of the granola and strawberries. Fill cupcake pan with full scoop of batter into each cup. Sprinkle with remaining granola. Bake for 20-25 minutes until muffin springs back or a knife is inserted and comes out clean.

Step 3: Frost

Once cooled make frosting In a medium bowl, combine pudding mix with milk. Mix until smooth. Gently fold in whipped topping until no streaks remain. Spread evenly over cupcakes. Then top with sliced strawberry.
