Introduction: Healthy Chocolate Biscotti

I absolutely love biscotti! But
The difference between my
Biscotti and regular biscotti is that mine can fit into a healthy diet without having to worry about unhealthy calories, fats, etc!

Step 1: Ingredients!

Chocolate protein - 2 scoops
Oatmeal - 2 1/2 cups
Eggs - 3
Salt - 1/4tsp
Sunflower seeds (handful)
Dried Cranberries (handful)
100% Turbinado sugar - 1 cup
Flour (for dusting etc)

You can use any kind of nuts or dried fruit you'd like, i also think cashews would be amazing in these, you can also use any kind of protein you'd like, i just happen to use MusclePharms arnold protein for my workouts, and the taste cant be beat!

Step 2: Eggs N Mixin' the Fixin's'

Crack 3 eggs into a nice big mixing bowl, add sugar and salt then mix until frothy

Step 3: Flour/oatmeal Mix

Instead of using flour to blend everything together i use oatmeal, and i use a small food processor to grind it down into a fine "flour-like" powder. Oatmeal is a much smarter "healthy" option, its full of wonderful delicious complex carbs!

Step 4: Mixin Once Again

Mix the oatmeal and protein powder into the egg mixture and stir by hand, afterwards blend in the nuts and dried fruit

Step 5: Dough Ball

Place the mixture onto wax paper, The mixture will be extremely sticky and unworkable, this is where the flour will come into play, dust the mix with the flour to get it to form a ball of dough, pretty much to the same consistency of an actual loaf of bread. Then slice it in half and form 2 logs

Step 6: Cooking!

Preheat oven to 350 degrees, Place the logs onto a baking sheet along with the wax paper, allow to cook for 30 minutes, then remove and let cool for 20 minutes, while the biscotti is cooling lower the oven temperature down to 325 degrees.

Step 7: Slicin' N Dicin'

After the biscotti has cooled, slice it on an angle to give it that classic biscotti sliced look

Step 8: Bake Again

Bake the biscotti at 325 degrees for 12 minutes, remove from oven, flip the pieces over then bake for an additional 12 minutes

Step 9: Chocolate Sauce!

While the biscotti is in its final cooking stages go ahead and make your chocolate sauce! The recipe calls for 1/8th cup of milk 1tbsp cocoa powder and 1tbsp of protein, i doubled up on the whole recipe to accommodate the large amount of biscotti i made, just mix it in a simple bowl and you are good to go!

Step 10: Drizzle

Drizzle the chocolate over the cooked biscotti then let sit, the chocolate will harden onto the "still warm" biscotti

Step 11: Storage

Store your final product in and air tight container with wax paper separating layers of biscotti.

Step 12: Final Thoughts
