Introduction: Home-Alone Single Blueberry Pancake
Have you ever really wanted pancakes while alone at home, but didn't want to make a whole batch? Sure, you could make a batch and store it in the fridge, but you don't have room. Plus, all those uneaten pancakes will just make you feel even lonelier.
I've solved your problem. I scaled back my favorite pancake recipe so that it produces only ONE pancake. It's good for a snack, but if you double the recipe it can become a meal. The best part is that it's egg-free, so you won't have to add one sixth of an egg or anything crazy like that. It can even be vegan if you use dairy-free milk.
You probably have all the ingredients on hand, so you're only 5 minutes away from pancakey goodness.
Step 1: Mix Ingredients
Grease or spray a frying pan and start heating it up.
Mix your ingredients in a small bowl in this order:
3 Tbsp Flour
1 tsp sugar
3/4 tsp baking powder
small dash of salt
1/6 cup milk (2 Tbsp plus 2 tsp)
1/2 tsp oil
1/4 tsp vanilla extract
Add-ins of choice. I used blueberries and cinnamon, but you can add banana, chocolate chips, strawberries, whatever you have on hand.
Step 2: Cook Your Pancake
Pour the batter into your frying pan. Be patient.
When bubbles form in the middle, it's ready to flip.
Cook the other side until it's nice and brown.
Step 3: Add Toppings and Devour
Top with maple syrup, powdered sugar, or fruit. Enjoy!

Double recipe. Add 1 tbsp water, pinch of cinnamon, some blueberries and 1 tbsp marscapone cheese to batter. Fry in butter.

Yummy! I am a pancake lover, and I have been looking for a good pancake recipe for a long time. I am going to try this and see how it turns out (since I am NOT a very good cook... I am aspiring. ;))!
