Intro: Homemade Energy Bars

These bar cookies are great energy food; I especially love to take them snowboarding. The recipe came from my mom's friend years ago and I modified it to suit my taste.

STEP 1: Gather the Ingredients

First off, make sure you actually have the ingredients. They are as follows:
1 stick (1/2 cup) butter
1 cup brown sugar
2/3 cup peanut butter
1/2 cup light corn syrup
2 tsp. vanilla
1/2 cup coconut
1/2 cup raisins
1 cup semi-sweet chocolate chips
3 cups dry oatmeal (quick or regular)

STEP 2: Begin Mixing Ingredients

Start by mixing butter and sugar until smooth.

Then, add peanut butter, corn syrup and vanilla and mix until smooth.

Add coconut, chocolate chips and raisins, and lastly add the rolled oats.

Coconut, raisins and chocolate chips can be left out and/or substituted for your choice of nuts, seeds, dried fruit, carob chips, etc.

STEP 3: Press and Bake

Press the dough evenly into a 9x13in baking pan and bake at 350 for 15 - 20 minutes or until golden-brown around the edges.

After baking, allow to cool until firm before removing from pan. Fresh out of the oven they are VERY soft but will firm up when they cool.

Could honey substitute for syrup?
I take a no-bake (raw) approach when making my "Quick Energy Morsels," so I thought I'd share.. Grind walnuts, flaxseeds, and raisins in a food processor, roll into balls, coat with unsweetened shredded coconut, and refrigerate overnight before eating. But, don’t hesitate to try different dried fruit (ie: apricots, blueberries, cranberries, dates) and nut (ie: almonds, cashews, pecans, pistachios) combinations, or even seeds (ie: hemp, pumpkin, sunflower) and spice (ie: cinnamon, nutmeg, vanilla) combinations. The attached picture is one of the pieces on a plate of drying lemon peel -great for a lemony zest in pastas!
