Introduction: Homemade Instant Pot Curd (Tayir /தயிர்) (Dahi /दही)

Curd, known as Tayir (தயிர்) in Tamil and Dahi ( दही) Hindi, has been enjoyed in the Indian subcontinent since its earliest days. Known for its probiotic qualities, Indians eat curd with almost every meal. From tempering the heat of spicy curries to adding a creamy texture to rice, curd has a wide variety of uses.

This recipe will teach you how to make curd using an Instant Pot. This is one of the easiest ways to prepare this dish at home.

Supplies

Ingredients:


Half a gallon of A2 brand Milk

3 tbsp of any brand unflavored / unsweetened Greek yogurt


Utensils / Aids

1 whisk

1 3-quart Instant Pot® Duo™

Step 1:

Take a 3-quart Instant Pot® Duo™ model and pour a half-gallon of A2 milk into it.

Step 2:

Add 3 tablespoons of unflavored Greek Yogurt into the A2 milk

Step 3:

Using a whisk, mix well for 1-2 minutes or until the mixture of Greek Yogurt and A2 milk is smooth (without lumps)

Step 4:

Turn the knob on the Instant Pot® Duo™ from Venting to Sealing

Step 5:

On the Instant Pot® Duo™ look for the yogurt button setting and press it once.

Step 6:

Once yogurt mode is engaged the timer will start counting up to 8 hours from 0:00

Step 7:

At the end of the 8-hour process, the word YOGURT will appear on the display panel and your curd will be finished

Step 8: Storage / Safety

Place curd in an air-tight container and sealed with a lid, and place at the back of the refrigerator where temperature will be the coldest and keep consistently cool. Shelf-life is 2 weeks.

When serving a partial portion of curd, remove what you need from the container, then immediately cover and seal remainder and place back into refrigerator.
