Mayonnaise is the basis for many sauces and dressings, like Thousand Island Dressing, Aioli or Tartar sauce. Making fresh, homemade Mayonnaise is quick and easy, yet tastes so delicious.

Step 1: Make Mayonnaise

Stabilize a bowl by setting it on a towel inside of a sauté pan. Combine an egg yolk, 1 teaspoon of mustard, 2 teaspoons of lemon juice and 2 teaspoons of vinegar, and a pinch of salt and white pepper. Mix well until smooth.

Slowly add 100 - 150 ml of oil in a thin stream down the side of the bowl. Wait for the oil to combine with the yolks before adding more.

When the mixture begins to thicken, the oil can be added in a steady stream. Adjust the seasoning and the consistency. If too thick, add a teaspoon of water.
