Intro: Homemade Vanilla Cream Soda

Make your own vanilla cream soda that beats anything you could possibly buy in the store.

You will need:
2 cups sugar
1 cup water
1 tablespoon vanilla extract
a healthy supply of seltzer (carbonated water), half and half, and cubed or crushed ice

STEP 1: Make Syrup.

The first thing you need to do is make some simple syrup. It's basically just a lot of sucrose crystals (table sugar) dissolved into water.

Put 2 cups of sugar and 1 cup of water into a small saucepan. Put it on the stove and crank the heat up to high. Stir it up until all of the sugar is dissolved. It will look cloudy, but let the solution come to a boil and it will automagically turn clear. Once it's clear take it off the heat and let it cool for about 5 minutes.

STEP 2: Add Vanilla.

Now that your simple syrup has cooled down a little bit, stir in a tablespoon of pure vanilla extract.

Now use a funnel to pour your syrup into a storage container of some sort. A plastic salad dressing bottle works well since you'll need to be able to pour the syrup. Make sure the container is big enough. The one I use is 600 ml.

Store it in your refrigerator.

You don't want it to melt the ice in your soda, so it's best to chill it before use. I like to give it an ice bath if I want it for immediate use.

STEP 3: Mix It Up. Enjoy.

Pour about an ounce and a half of the vanilla syrup into a 12 oz. glass. Add ice to preference, about 8 oz. seltzer (use more or less to taste), and just a splash of half and half.

Stir it up and you're ready to enjoy!

Alternatively, you could leave the vanilla extract out of the syrup and use it to sweeten other soda concoctions. Try, for example, plain syrup with the juice of one lime.

Just made it and it turned out quite close to store bought cream soda but I think it healthier (no preservatives and less sugary) All good
is it supposed to foam up after being mixed?

I am two years late to the page but mine foamed up.

I think that's normal. I made chocolate cherry egg creams with cherry soda, chocolate syrup, and milk. The point of that is the foam.

What would happen if you just used water? I can't have any carbonated sodas and I am really craving cream soda and butterbeer

Tasty! My syrup doesn't turn quite so dark when I add the vanilla, however; when I add it to the seltzer water, it becomes quite pale, rather than golden as in the images above. I suppose that's normal?

Try to find some raw cane sugar instead of dominos granulated sugar. You will get a better tasting, and more appealing colored mix
I made this cream soda and it was good! I changed the recipie a little and made my own home made root beer. All you have to do is substitute the vanilla extract out for about 2 1/2 to 3 teaspoons of root beer extract/concentrate. It was delicious! I like the brand McCormick Rootbeer concentrate the best, but any Rootbeer extract will work.
Also, use about 3/4 of a cup per liter of carbonated water, or just less than a quarter of a cup (about 1/5 of a cup, or .18 of a cup to be exact) per cup of carbonated water.
Also, don't add half and half unless you want your Rootbeer tasting like a Rootbeer float! But then again, that might taste good anyway!

I substituted about a fourth of the sugar for honey to add a little aroma to the flavor; definitly turned out lovely!

Just tried this and wow... good. Really tastes like cream soda! Thanks! I did substitute regular milk for half and half. I will have to get some half and half and see how that changes the taste/texture.

Hi I just found this recipe and had a question. Can I use regular milk or evaporated milk instead of half and half? I don't use half and half for anything and would like to be able to make this with out any items i don't already have.

Thank you so much for this! I have a medical condition and can't have any off the shelf sodas as they have ingredients or preservatives that will cause me pain. I have been missing cream soda for sure!

Half and half is half milk and half cream. I don't know if it's called something else outside of the United States, but if they don't sell it at the market where you live you can just make it yourself by mixing 1 part milk and 1 part cream. And actually, you can leave it out completely and it will turn out just fine.
