A lot of my fans have been requesting for some gluten free recipes and you know me, I love simple and quick recipes. This recipe for Gluten Free Oat Cookies takes only two ingredients and is also vegan. They are delicious and only take 20 minutes to do. Ingredients:

  • 2 Ripe Bananas
  • 1 Cup of Oats | Raw or Instant
  • Flavor Enhancers | Nuts, Chocolate, Dried Fruit | Optional

Instructions:

  1. Preheat oven to 350*F.
  2. Combine the ripe bananas and oats together using a fork to mash smooth.
  3. Add the flavor enhancers of your choice, if you using them.Scoop out tablespoon sized portions of the batter and place on a greased cookie sheet.
  4. Bake for 15 minutes or until golden brown.
  5. Allow to cool before eating.
  6. Enjoy!

Do you cook these in the bottom, middle or top shelf of the oven?

I have been looking for a healthy grab and go breakfast food for my husband. I made these and I really like them, but he was so-so on them. Same recipe, just add 1/3 cup peanut butter, and he loves them!

Of course It would. I've used the Cinnamon one and the maple one. SO GOOD!!!!
