Introduction: How to Slow Cook Ribs

In this video I'll show you how to slow cook BBQ spare ribs over charcoal.

You Will Need...
Charcoal Grill
Charcoal
Hickory Chips
Charcoal Chimney
4 Sheets of News Paper
Matches or A Lighter
Tin Foil Tray of Water
Grill Utensils
Pork Spare Ribs
Sweet Baby Rays BBQ Sauce
Olive Oil
Tin Foil
Apple Juice (1 Cup)
Rub
Bowl of Water (for soaking hickory chips)
4 Hours of Cooking Time

Step 1: Get The Charcoal Burning
Crumple the 4 sheets of news paper and place them in the lower compartment of the charcoal chimney
Dump the charcoal in the upper compartment of the charcoal chimney
Place the loaded chimeny on the gril
Light the news paper in the bottom with matches or a lighter
Let it brun for about 15 - 20 minutes or until you begin to see the coals turning red hot
Start soaking the hickory chips in a bowl of water

Don't use lighter fluid. Everything you put in the grill will effect the flavor. You don't want your ribs tasting like lighter fluid. You want them tasting like BBQ and Hickory.

Step 2: Prepare The Meat
Wash the meat. A quick rinse under some running water will do the job
Cut off any rough or fatty parts that you wouldn't want to eat
Rub olive oil into the meat. This will lock in the juices and flavor
Rub the Rub into the meat. Be generous

Step 3: Prepare The Grill
After the charcoals have caught fire in the chimney they should be nice and red hot
Remove the grate and dump out the charcoals into the bottom of the grill
You will need arrange them on one side of the grill to make room for the water tray
Place a tray of water in one half of the grill
You should add more charcoal at this point as needed to fill the other half of the grill
Place the grate back onto the grill

The bottom vent should be free and clear of ashes from previous fires so that air can fuel the fire from below. Make sure you place the coals and fire over the bottom vent, and not the tray of water.

Step 4: Put The Ribs On the Grill
Place them over the water tray so that they are cooked by indirect heat
Put the water soaked Hickory chips on top of the burning coals
Put the lid on the grill and locate the top vent over the water tray and meat
The bottom vent should be under the charcoal and fire
Both vents should be open to allow air to flow into the bottom and out the top
Let the ribs cook for 1 hour

If your looking you ain't cooking. Don't take the lid off to look at the meat unless you absolutely need to. Every time you do this the temperature drops dramatically and all the tasty smoke flavor escapes.

Step 5: Flip The Ribs (1st Time)
After the first hour has passed take the lid off and flip the ribs
If your cooking 2 racks of ribs at the same time you may want to switch their positions on the gril
Put the lid back on and let the ribs cook for a second hour
Add more water soaked Hickory chips every time you take the lid off the grill. That will keep it nice and smokey inside.

Step 6: Flip The Ribs (2nd Time)
After the second hour has passed take the lid off and flip the ribs
Put the lid back on and let the ribs cook for a third hour

Step 7: Wrap The Ribs In Tin Foil
Take the ribs off the grill and wrap them in tin foil
Poor a little splash of apple juice over the ribs to moisten them up and add some flavor
Place the ribs back on the grill and let them cook for 30 minutes in the tin foil

Step 8: Apply BBQ Sauce (1st Time)
Take the ribs out of the tin foil and apply your favorite BBQ sauce to one side
Sweet Baby Rays works great
Let cook for 15 minutes

Step 9: Apply BBQ Sauce (2nd Time)
Flip the ribs and apply BBQ sauce to the opposite side
Let cook for 15 minutes
