Introduction: How to Infuse Spices Into a Turkey Using Smoke

This Instructable tells how to infuse the flavor of spices into a turkey on the grill using smoke.

Step 1: Materials

Grill w/exposed flame

fresh sprig of spice (examples: rosemary, juniper berries)


Step 2: Preperation

Begin grilling turkey as normal on the grill.

Step 3: Infusing the Flavor

Take the flavor you want to infuse into the turkey and throw it directly into the flame of the grill. The flavor of the spices will travel with the smoke of the grill and be trapped inside the turkey. This will work with most spices, but works best with wood chips, like if you want a hickory flavor in the turkey.

    this works well with wild mint and a firey bbq, we were up at a campsite kind fo thing and there was a fire pit we threw in random sprigs of wild mint even though we were cooking ready to cook chicken and stuff, tastes way better because the charring had some flavour other than carbon to it...

    Don't use this method to "infuse" your turkey with oregano. The smoke given off by oregano smells like the smoke given of by a less legal plant...
