This is how you make Brazilian Carrot Cake.
Step 1: Materials and Ingredients You Will Need
- 4 Large carrots, peeled and thinly sliced
- 4 Eggs
- 1 Cup of cooking oil
- 2 Cups of white sugar
- 2 Cups of all-purpose flour
- 1 Tablespoon of baking powder
For Chocolate Covering:
- 2 Tablespoons of butter or margarine
- 1 Cup of white sugar
- 1 Cup of instant hot chocolate mix
- 3/4 cup of milk
Step 2: Blending and Mixing
Preheat the oven to 350 degrees F. Lightly grease a 9x13 baking dish. Place the eggs, carrots, sugar, and oil into a blender. Let it blend for about 2 minutes. Pour the carrot mix into a mixing bowl. Stir in the flour and baking powder and mix it until its well blended. Pour the batter into the prepared baking dish.
Step 3: Baking
Put the baking dish in the preheated oven for 30 minutes. To see if the cake is well cooked, lightly insert a fork in the middle and if the fork comes out clean, that means cake is ready and well cooked.
Step 4: Making the Chocolate Icing
While the cake is baking, make the icing by placing the butter, 1 cup of sugar, instant hot chocolate mix, and milk in a pan. While stirring, heat the stove to almost boiling over medium-high heat until the mixture thickens. When the cake is done, remove the pan from the oven and immediately spread the icing evenly over the top. Let it cool down a little unless you want a extremely hot cake in your mouth.
