Introduction: How to Make Santa Fe Chicken Soup

In this instructable, I will show you how to make Santa Fe Chicken Soup.

Step 1: Ingredients

For this recipe, you will need:

2 lbs of chicken breast

2 16 oz. cans of kidney beans

28 oz. of chicken broth

12 oz. salsa

1 28 oz. can of diced tomatoes

3 tbsp chilli powder

1/2 tsp salt

1/2 tsp pepper

1/4 tsp cayenne pepper

2 tsp ground cumin

1/4 c olive oil

4 garlic cloves

2 onions

4 red peppers

1 12 oz pkg of frozen corn

Step 2: Grab the Red Peppers First.

Remove the seeds and chop up the red peppers.

Step 3: Next, the Garlic

Mince the garlic.

Step 4: I'm Not Crying, You're Crying.

Dice the onion.

Step 5: Now for the Main Attraction

Cut the chicken into bite-size pieces.

Step 6: Heat It Up!

In a VERY large pot (try to get one bigger than mine) add the oil, red peppers, onions, garlic and chicken and cook on medium heat until the chicken is no longer pink and the vegetables are tender. Make sure to stir frequently.

Step 7: Spice It Up!

Add the chili powder, cayenne and cumin and mix in thoroughly.

Step 8:

Mix in the chicken broth and tomatoes. Reduce the heat and cook for 15 minutes.

Step 9: Make Room for Everything Else!

Now add the rest of the ingredients, stirring each in thoroughly and cook for an additional 15 minutes or until the chicken is tender.

Step 10: Enjoy!
