Introduction: How to Make Sourdough Bread
Today we are going to make a pre-ferment for sourdough bread, then go on to make three plain sourdough loaves. I hope you have fun making this delicious bread and don't forget to comment in the comments section below.
Step 1: Ingredients
You will need:
- 56g Mother starter
- 276g Water
- 340g Flour
Step 2: Mix It Together!
Add starter, water and flour to a bowl and mix together.
Step 3: Let Rise
Once mixed cover with a tea-towel and leave at room temperature for 3-5 hours until bubbly. You can then use your pre-ferment to make the Sourdough bread!
Step 4: Ingredients
For your sourdough bread you will need:
- Your sourdough pre-ferment
- 1188g flour
- 675g water
- 15g salt
- 7g malt *optional
*The malt gives a better crust.
Step 5: Mix It Up Again!
Add the pre-ferment, then your water, flour and lastly your salt and malt. Mix it all up until completely combined, then tip it out into a big bowl.
Step 6: The Rising
Cover with a damp tea-towel and let it sit at room temperature for 3-8 hours or until it has doubled in size. How fast this step takes depends on your room temperature. Particularly in Winter this process can take considerably longer.
Step 7: Second Rise, Bake, Done!
Once your sourdough has risen divide into thirds and put in your loaf tins. Let it rise again for another 2-5 hours and then bake for 45 minutes or until golden brown in a 220 degree Celsius oven. Once cooked tip onto cooling rack and cover with a few tea-towels. This helps softens the crust, which other wise can be very crunchy.
