Intro: How to Make Fried Rice

For this recipe you will need:

½ cup onion, diced
½ cup red bell pepper, diced
¾ cup mushrooms, thickly sliced
2 cloves of garlic
2 eggs
3 cups cooked (preferably day-old) white rice
¼ cup soy sauce
¼ olive oil

STEP 1: The Right Temperature and Oil

The most important thing to remember is that fried rice needs to be cooked at high temperatures. To test the temperature, heat up the frying pan until water drops dance across and then evaporate after a couple seconds. Cast iron is always better as it distributes heat evenly across the surface. 

Use any oil that allows to cook at a higher burning point, since you will be cooking at high temperatures. Start with two tablespoons of oil.

STEP 2: Veggies

Crush the garlic using a garlic press and add it to the oil. Then add your diced veggies almost immediately to avoid burning the garlic. Fry well until onions become translucent and vegetables are soft, then set the vegetables aside.

STEP 3: Frying the Rice

Add the rest of the oil and once its hot add the rice. Stir slightly to cover all grains with oil as this will result in crispier rice.

STEP 4: Color and Aroma

Stir in the soy sauce, making sure that it caramelizes the rice. This should be a natural result of using cooking at high temperature, but it's always good to stir to make sure your rice doesn't get soaked in sauce and become mushy.

At this point you can add an egg and stir in the vegetables. Once the veggies have reached the same temperature of the rice, remove the pan from the stove.

Serve immediately if possible.

it's very easy to make! I think i can make it if I want to save time~thank you for posting!
Will the rice be al dente? If I follow your recipe exactly how it is written here, the rice will not have enough time to cook.
Is that the intention?
