Introduction: Ice Cream Sandwich

Who doesn't love cookies and ice cream? They're even better together! One of our favorite food trucks is an ice cream sandwich truck. They have several flavors of ice cream and cookies and you can put together any combination you want. Ice cream cookie sandwiches are very versatile, this Instructable seems simple and it is---so is making ice cream sandwiches at home.

Step 1: BoM

Cookies (homemade or store bought, I made these sans Nutella)

Ice cream (homemade or store bought)

Mini chocolate chips, sprinkles, chopped nuts etc.

Step 2: Cookies

Bake or set out an even number of cookies. I baked cookies, making most of them larger than I usually would. After baking I let them cool for 15-20 minutes.

Step 3: Ice Cream

We had an unopened container of vanilla ice cream. The easiest way to go about getting the ice cream on the cookie is to cut the container away from the ice cream and then slice it. I didn't do this and opted to scoop instead, mistake. Get a slice of ice cream or a couple of scoops on one side of your cookie and then top with the second cookie. Press down firmly, but not hard enough to break the cookie.

Step 4: Decorate!

Put your sprinkles, mini chips, chopped nuts etc onto a plate or wax paper and carefully, but firmly, roll your sandwich sides into the pile.

Step 5: Wrap Up!

By the time I was done making all the sandwiches I didn't feel like eating one, so I wrapped them in wax paper and then wrapped them in plastic wrap and stored in an airtight container in the fridge. These will stay good for a few weeks if stored properly.
