Introduction: Iced Oatmeal Cookies

For my shower gift my sister collected treasured recipes from my family and my husband's family. The recipe box was filled with many options for dinner and dessert. I've had this recipe box for over 20 years and I refer to it less and less over time, but there is one recipe that I take out often to bake for family and friends. This recipe was my mother's; these Iced Oatmeal Cookies are scrumptious and the icing adds just the right amount of sweetness.

Step 1: Ingredients and Method for Dough

2/3 cup sugar

1 cup brown sugar

2/3 cup coconut oil, melted

1/3 cup coconut milk

1/2 t baking powder

1 t baking soda

1 3/4 cup whole wheat pastry flour

1/2 t sea salt

1 1/2 t cinnamon

2 cups oatmeal

Method:

Pre-heat oven to 350 degrees, line 2 large baking sheets with parchment paper, set-aside.

In a large bowl, stir together the sugars, and oil. Add coconut milk, baking powder, baking soda, flour, sea salt, and cinnamon. Mix until fully combined, stir in oats.

Take approximately 2 T of dough, roll into a ball and slightly flatten. repeat until all cookie dough is gone.

Bake 10-12 minutes. Let cookies cool on a wire rack. While cookies are cooling make the icing.

Step 2: Ingredients and Method for Icing

1 cup powdered sugar

1/2 t cinnamon

2 T water

Method:

In a medium shallow bowl, stir together the sugar and cinnamon, add water. Mix until smooth, if icing is to thick add an extra 1 T of water at a time until you reach a consistency you like.

Dip cooled cookies face down into the icing, let dry face up on a cooling rack. Repeat with remaining cookies.

Store cookies in an air tight container.
