Step 2: Eggssssellent Egg Whites
First we want to separate the yolks from the egg whites. Crack the egg on the counter or side of the bowl, then open it up and shuffle the yolk back and forth between the two big egg shells, allowing the egg white to fall down into a large bowl, then place the yolks in another bowl. Now using a hand mixer beat the egg whites on medium speed until stiff peaks form. You will know they are ready after to turn off your mixer and raise up the beaters a little peak will form but it won't dissipated back into the egg whites, it will say there. Hence the name "stiff peaks". Set the egg whites aside for now.
Step 3: Butter and Sugar Time
Now let's cream together our softened butter and sugar in a large bowl. Again using your hand mixer or stand mixer for this.
Step 4: Yolk It Up
Now add your two egg yolks to the creamy butter and sugar mixture. Mix until the egg yolks are combined.
Step 5: Cake Flour and Butter Milk
Next we add in our cake flour and butter milk a little at a time. So add 1/3 of your cake flour and 1/3 of your butter milk. Mix them until incorporated. Then repeat the process, make sure to add in your salt too during one of those mixes. Scrape down the sides of the bowl with a spatula as necessary throughout this process.
Step 6: You See Me Folding, the Egg Whites...
Now let's add our egg whites and then our baking powder to our batter. Now gently fold it into the batter using a spatula. Take the spatula go under the batter then fold it into itself. Keep repeating until the egg whites have been combined and your are left with a nice light fluffy waffle batter.
Step 7: Spray and Cook
Now we heat up our waffle iron. I am using a professional restaurant style waffle iron, I decided to splurge and get an awesome waffle iron back in the day, because I love making waffles. I have used this numerous times. Give your waffle iron a good spray with kitchen spray, then add some waffle batter, I usually use a soup ladle to add the batter. Close your iron and let it cook. It also has an indicator that beeps when the waffles are ready. Once they are done cooking, open up the iron and behold your awesome waffle.
Step 8: Remove and Serve
Now use a fork to get under the waffle and place it onto a plate. Then serve it however you like. I love some maple syrup and a dollop of butter. I also enjoy strawberries, whipped cream, etc. Enjoy! :)

For waffle irons without a "done" indicator, watch for the waffle iron to stop steaming, or nearly so, to know when it is ready to remove.

that is how i make my waffles. except i always put in a generous splash of vanilla extract. takes them another level.

Awesome! Yeah I use vanilla extract in my other waffles, but staying true to Jackie's recipe, I don't with these. Do you use cake flour in your waffles?

i just use self raising flour rather than plain flour. easier than having to mix in the baking powder first thing in the morning when my eyes are still half shut lol

hahaha nice. Cake flour is different then All-purpose/plain flour, it is part of the magic that makes these so good. You should try it out some time. ;)

not being american i have no idea what cake flour is. i guess its a bit like your bisquick is flour and shortening pre mixed?

Yeah I guess I didn't realize how readily available it was outside of the US. No it is different then that. Cake flour is a flour that is very finely milled from soft winter wheat. It has a lower protein content than all-purpose flour, and it is finer, lighter, and softer. It’s also bleached, so the color is paler and the grain is less dense.

Because of the lower protein content, cake flour produces less gluten. Which makes goods baked with it, lighter, more tender, and soft. :)

I just finished a pancake breakfast, and it still made me hungry! That's pretty near the Joy of Cooking recipe. I like doing the egg whites separately, as you,but I'm a little less careful about combining dry and wet than you are: I mix all dry and then add the wet, followed by folding the egg whites.
Does adding the baking powder with the egg whites retard premature rising?

Awesome! I am not entirely sure, this is Jackie Kennedy's recipe so I just followed it to a T. Honestly I don't know if it matters when you add the baking powder, haha, but I just followed what she did.

You've done it again, Matt! Lovely recipe. It's very similar to the one I developed when our kids were little; we used to have them for supper on occasion and it was a Big Deal if we had ice cream to go on top! I like to use about half whole wheat and half regular white flour. It still has the nice fluffy texture but a more robust flavor. My best friend has a restaurant-style waffle maker that makes Two at once! She puts batter in the top one, flips it over, and adds batter to the bottom one! Great Instructable and photos; thanks!

Thank you! :) Yeah I normally use all-purpose flour when I make waffles, but in order to be the Authentic Jackie Kennedy waffles, it has to be cake flour, hahaha. The cake flour makes them lighter and not as heavy as all-purpose flour waffles, but either way, they are still yummy! Yes those double waffles ones are awesome! :)

I love the look of these waffles! I generally make ones where I leave the batter to sit on the bench and rise overnight so my sons can have them before breakfast before they leave for school. These look much fluffier with the beaten egg-whites and creamed butter and sugar in them. I need to try this one during a weekend!

Yes! If you like waffles give these a try I think you will love them!! :) :)

I'm now emboldened to break out our waffle maker and venture forth for batter and wurst. I figure it will eat just like waffles and fried chicken anyways. hahaha
The journey of waffles from a quick hot bread supper table to a staple at breakfast tables makes a good story to follow up on for foodies
Thank you yet again Matt..
