Intro: Jalapeno Metchup- Aka Spicy Fry Sauce

Here's one of my favorite concoctions for "Metchup" (aka Fry Sauce). 

If you've got a "heat" tooth, it might become your favorite, too!

This recipe yields about 3/4 cup. You can double, triple or quadruple it with equal success.

Remember to give it a rest period in the refrigerator before serving. This allows the heat from the jalapenos to mature and blend for some tasty, lip-smackin' Fry Sauce!

Ingredients:
  • 1/2 cup Mayonnaise
  • 2 Tablespoons Homemade Ketchup- (Substitute with store-bought ketchup at your own risk. ;-)
  • 1 teaspoon Garlic- (2 cloves) grated or minced
  • 1-3 Tablespoons Pickled Jalapeno peppers- finely diced
  • 1-2 teaspoons Juice from Jalapeno can/jar
  • 1/4 teaspoon Chili Powder
  • 1/8 teaspoon Liquid Smoke- Mesquite
  • 1/2 teaspoon Garlic Seasoning Salt
Finely dice enough pickled Jalapenos until you have at least 1-2 Tablespoons.  Grate the whole garlic cloves until you have 1 teaspoon.

Put all the ingredients in a medium bowl.  Whisk together until combined. Taste and adjust seasoning or add more diced jalapeno as preferred.

Spoon into glass container. Cover and refrigerate 1 hour or overnight if time allows.

Serve as a dunking/dipping sauce  or spread it on your favorite Hamburger.  There are NO RULES when it comes to Metchup. Set your creative soul free and customize it your way!!!

this batch is made from..

Mayonnaise
tomato sauce
djoin mustard
chilli paste
wasabi paste
all purpose seasoning (which is a mixture of various spices etc)

yes i recently bought a tube of wasabi paste for sushi (which i discovered i do not like) and even though i'm not a chilli fan i love the taste and the "heat" of wasabi
i read it and it does sound very tasty!
i do "food tech" in school and was given the choice of either making sushi or teriyaki chicken..i made the sushi and regretted it
the flavor of nori is similar to the smell of a bait-shop! ICK
lol... maybe you should have consulted me first. See? I was reading your teriyaki mind... just a little too late! ;-D

thought I'd tell you about my latest variation of this delicious sauce :D
this is what i used

tar-tare sauce
tomato sauce (store bought)
a tiny bit of mayonnaise ( i ran out!, making Dijon mustard mayonnaise as well!)
Djoin mustard
a bit of red chilli paste

it tastes great! i love your recipe bajablue, it rocks :D

Post a pic if you have one... please. ;-) What did you put in your Metchup?
If I were making it with fresh chiles, I'd grate them and add a teeny bit of vinegar.

Chile powder would work, too... but give the Metchup resting time so the flavor matures.

There are no mistakes with metchup... as long as you add what you like.  I've added crumbled blue cheese, too. It tastes great! ;-p~
