The dish that I used to make all the time, as it is not only delicious but also keto friendly. It is full of healthy nuts and seeds and is a great filling and mouth-watering.
We usually have very less Indian Vegetarian options for low-carb diets. I have made this Keto Baingan recipe with very basic ingredients. This is one of the best tasty options when you are in Ketogenic Diet (Keto Diet) or low-carb diet. This is easy to make and also a quick and easy recipe to make at home.
LOW CARBOHYDRATE INDIAN KETOGENIC RECIPE
The best part is kids love this very much.
Step 1: Cut Off the Top and Lengthwise

Firstly cut off the top of the eggplant and then cut lengthwise into long thin slices, about a quarter of an inch wide.
Step 2: Cut Onion

Cut the onion in the ring shape.
Step 3: Ingredients

- Eggplant(Brinjal)(बैंगन ) - 1 big
- Onion(chopped) (बारीक़ कटी हुई प्याज़ ) - 1/2 cup
- Walnuts (अखरोट) - 10
- Green chili (बारीक़ कटी हुई हरी मिर्च ) - 1
- Hung curd ( हंग-कर्ड) - 4 tablespoon
- Mint leaves (पुदीने की पत्तियां) - 10 leaves
- Salt (नमक ) - to taste
- Coriander (धनिया पत्ती ) - 20 grams
Step 4: Grease Pan With Oil

Heat up the pan and grease it with olive oil.
Step 5: Cook Eggplant Slices

Place the slices of eggplant in the pan and let them Cook from both the sides.
Step 6: A Big Bowl

Now take out these slices into a bowl.
Step 7: Saute Onion Rings, Green Chili & Mint Leaves

In the same pan add 1 tablespoon olive oil and saute onion rings, green chili, and mint leaves until they change color. Then take out the onion in the same bowl.
Step 8: Mix Well

Mix well with the help of a fork.
Step 9: Crush Walnuts

With the help of mortar and pestle crush walnuts
Step 10: Add Hung Curd, Walnuts, & Salt

Then add hung curd, crushed walnuts, and salt to the eggplant and onion mixture.
Step 11: Mix Again

Mix well.
Step 12: Refrigerate

Refrigerate this for about an hour before serving.
Step 13: Garnishing
