In this Instructable, I will show you how to make a Keto Granola Bar. Are you on the Keto diet but love eating granola bars? Well, this keto bar is a great substitute for a granola bar. This keto recipe is very easy to make and low carb and gluten free. If I can do it, you can do it. Let's get baking! :)

Step 1: Ingredients and Tools

Ingredients:

  • 1 cup chopped/smashed pecans (125g)
  • 1 cup thinly sliced almonds (110g)
  • 1 cup packed coconut flakes, unsweetened (75g)
  • 1 large egg
  • 3 Tbsp. of stevia (or stevia blend 2 parts stevia 1 part sugar) (45g)
  • 2 Tbsp. peanut butter (sugar-free) or almond butter
  • 1 Tbsp. coconut oil (15g)
  • 1/4 cup sugar-free chocolate chips (optional)
  • 3/4 tsp. of salt (4g)

Tools:

Makes 12 keto bars (roughly same size as a granola bar)

I used the "Very Well Fit" Nutrition calculator and came up with this: Per Bar - Calories168, Total Fat 16.1g, Saturated Fat 4.2g Cholesterol 0mg Sodium 149mg Total Carbohydrate 8.5g Dietary Fiber 2.9g Total Sugars 1.3g Protein 3.9g Vitamin D 0mcg Calcium 29mg Iron 2mg Potassium 125mg

Step 2: Smash and Mix

Preheat the oven to 350 F/176 C. Add the pecans to a bag and then give them a good smash with a meat tenderizer. Or you can certainly use a food processor if you like. Then add them in a large bowl along with the almonds and coconut flakes. Mix those ingredients together with a spatula or wooden spoon.

Step 3: Eggsellent

In a small bowl combine the egg with the stevia. Whisk those ingredients together. Then add the sugar-free peanut butter or almond butter and coconut oil and combine all those ingredients until smooth.

Step 4: Yummy Chocolate Chips

Now add the sugar-free chocolate chips and the salt along with the egg mixture to the large bowl. Use a spoon or spatula to mix everything together.

Step 5: Bake Those Keto Bars

Now add the mixture to some sort of silicone mold. Use the spatula to press the mixture down in each cavity. You could also just spread it out on a sheet pan or use bread pans, etc. and then cut them, although they won't look as nice. Or you could use muffin pans and make them round. Totally up do you. Bake them in the oven for 18 to 20 minutes until the tops are golden brown.

Step 6: Enjoy!

Once they come out of the oven allow them to cool completely before removing them from the pans. Enjoy!
