Introduction: Low Fat Sticky Date Cupcakes

So, for this beautiful low fat recipe you will need:

1/2 cup pitted dates
3/4 boiling water
1 tsp bicarb soda
1 cup self raising flour
1/4 cup raw sugar
1/2 vanilla extract
1/8 baking power 
1 egg
1/4 low fat milk

Let's get it started!

Step 1: Mash It Up!

chuck this dates into the boiling water and sprinkle in the bicarb soda, let it sit for 20 minutes. Once thats done use a masher and mash the dates until it becomes more of a paste. 

Preheat the oven to 180

Step 2: Combine

In a separate bowel combine the eggs, sugar, vanilla, baking powder and milk. Then stir in the date mixture and sift in the self raising flour. Be careful to not over mix.

Step 3: Bake!

Bake for 25-30 minutes.
