Introduction: Meatloaf With Bacon
Meatloaf is one my favorite home-cooked dishes. If you ask 10 people for their meatloaf recipe, you will get 10 different answers. Some folks use oatmeal instead of crackers, others add a tomato sauce on the top while it's baking. It's all really just a matter of preference. This is my recipe for a delicious Meatloaf with bacon. Comfort food at it's finest!
Step 1: Ingredients
You will need:
2 pounds ground beef (15% fat)
1 sleeve of saltine crackers (4 ounces)
2 Large eggs
1 can condensed tomato soup
1 Tablespoon Worchestershire sauce
1/2 teaspoon Tony Chacheres Creole seasoning
1 teaspoon dried parsley
8 slices Bacon
1 small onion (optional)
A large mixing bowl, a 9 x 5 loaf pan, food processor, measuring spoons and a large spoon.

Step 2: Cracker Crumbs
In the food processor, mix the crackers, seasoning and dried parsley. If you do not have a food processor, Place the crackers in a gallon sized freezer bag, seal the bag and roll will a rolling pin until the crackers are crushed.
Step 3: Combine Ingredients
Pre-heat oven to 350 degrees. In a large mixing bowl combine the hamburger meat, eggs, cracker crumbs with seasoning, worchestershire sauce and tomato soup. Mix thoroughly with large spoon. If your family likes onion in the meatloaf, chop a small onion and add to the hamburger mixture.
Step 4: Bake the Meatloaf
Place the hamburger mixture in a 9 x 5 loaf pan, press down with the back of spoon, cover with bacon strips. Place in a 350 degree oven for 1 hour.
Step 5: Remove From Oven
Take the meatloaf out of the oven and let set for 10 minutes before cutting. Serves 8 normal people...or 2 rednecks. Open a can of Ranch Style beans and you've got yourself a meal!
