Introduction: Millet Curd Rice

- Millets are rich in fiber, calcium and helps in controlling sugar levels and have numerous health benefits
- Millets are more healthier when compared to rice
- Curd rice is a must in every South Indian meal. Their meal ends by eating curd rice. Rice is rich in carbohydrates. We can include millets in our diet by cutting carbs which provides good nutrition and also flavour to the dish.
- Iam using foxtail millet variety. Foxtail millet also known as seteria italica is the most grown millet species in Asia. Millet curd rice is very easy to prepare and is refreshing.
- We can find many millet varities like barnyard millet, kado millet, pearl millet.

Supplies

Ingredients
- Half cup foxtail millet
- Two cups water
- Cooking oil
- Teaspoon mustard seeds
- Half teaspooon cumin seeds
- Teaspoon black gram
- Few curry leaves
- Few peanuts
- Salt as per taste
- Chopped ginger slices
- Curd
- One chopped green chilli
- Pepper powder
- One dried red chilli

Step 1: Soak the Millets

Take half cup of foxtail millet and rinse in water for 2 to 3 times
Add 2 cups water and soak for 3 to 4 hours

Step 2: Pressure Cook

After 3 to 4 hours transfer to pressure cooker and cook for 3 to 4 whistles.

Step 3: Tempering

- Take a vessel and little oil.
- When oil is heated add teaspoon mustard seeds, half teaspoon cumin seeds and teaspoon black gram.

Step 4: Add Curry Leaves and Green Chilli

- Add curry leaves and saute for few minutes.
Next add one chopped green chilli

Step 5: Add Ginger Slices and Peanuts

- Next add finely chopped ginger slices and saute till raw smell of ginger leaves
- Roast the peanuts until they turn crisp

Step 6: Add Pepper Powder and Dried Red Chilli

- Add one dried red chilli and pepper powder.Adjust according to your spiceness

Step 7: Add Curd to Pressure Cooked Millet

- Once millet is pressure cooked. Cool the millet and add curd to the millet and give a mix.
- Add little water and mix.

Step 8: Add the Tempering to the Millet

- Add the tempered mixture to the millet and give a mix. Ginger, pepper powder and roasted peanuts gives nice taste to the millet curd rice
- Add salt as per taste and give a mix.

Step 9: Serve the Millet Curd Rice

Millet curd rice is ready to serve. Top with some sev or peanuts and serve
