Introduction: Mini Gluten Free Cupcakes
There's nothing worse than watching a child miss out while others enjoy the party food. These gluten free cupcakes taste just like any other cupcake and the gluten free flour means that everyone can enjoy them.
Add icing and decorate with tasty gluten free sweets.

Step 1: Ingredients
100g gluten free flour
100g caster sugar
100g soft margarine
3/4 teaspoon baking powder
1 tsp lemon juice
Finely Grated Zest form 1/2 lemon
Step 2: Measure Ingredients
Carefully measure all of the ingredients.
Step 3: Cream the Butter and Sugar
Put the sugar, margarine, lemon rind and lemon juice in a medium bowl.
Using a wooden spoon beat together until light and fluffy.
Step 4: Add the Egg
Add a little egg, beat until smooth.
Repeat with remaining egg.
Step 5: Add the Flour
Combine the baking powder with the flour.
Fold the flour into the egg mixture.
Make sure that all dry ingredients are combined.
Step 6: Grease the Pan.
Grease a mini cupcake pan with a little oil.
Step 7: Spoon Into Pan
Carefully spoon the mixture into the mini cupcake pan.
Step 8: Bake
Bake for 12 minutes at 375 F.
Step 9: Cool
Transfer to wire rack to cool.
Remove from pan.
Step 10: Ice
Ice and decorate.
