Mini Pineapple Upside-Down Cakes




Introduction: Mini Pineapple Upside-Down Cakes

Do you want to make a tasty improvement on a pineapple upside-down cake? If so, then this delicious recipe is just for you!

Step 1: Gather Ingredients for Pineapple Topping

You will need

*1/2 stick of butter

*1 cup of brown sugar (light or dark)

*A can of crushed pineapples (drained- set the juice aside for later)

Step 2: Combining All the Ingredients for Pineapple Mixture

1.) Combine melted butter, crushed pineapples, and brown sugar until everything is evenly distributed

2.) Place bowl into fridge for better consistency (leave in fridge while preparing batter)

Step 3: Gather Ingredients for Making the Pineapple Cake

Ingredients you will need:

*3 eggs

*2 1/2 cups all-purpose flour

*3 teaspoons baking powder

*1/4 teaspoon salt

*3/4 cup milk

*1 teaspoon vanilla

*1 1/4 cups sugar

*3/4 cup of butter (or margarine) softened

*1/4 cup of pineapple juice

Step 4: Combine Dry Ingredients for Cake

1.) In a medium sized bowl combine the flour, baking powder, and salt

2.) Leave aside for later use

Step 5: Cream Together Sugar and Butter

1.)In a large bowl or mixing bowl combine sugar and butter until creamy

Step 6: Add in Vannila Extract and Eggs

1.) In the large bowl or mixing bowl add in vanilla extract and one egg and combine

2.) keep adding eggs one at a time until everything is combined

Step 7: Add Wet and Dry Ingredients to the Batter

1.) Add 1/4 cup of pineapple juice and 1/4 cup of milk to the batter and mix

2.) Scrape sides of bowl and mix again

3.) Add in 1/2 cup of milk to the batter and combine

Step 8: Assembling Pineapple Upside-Down Cake Before It Goes Into the Oven

1.) Put 1 tablespoon of the earlier pineapple topping mixture into the bottom of the molds

2.) Spread the mixture is evenly in the each of the molds

3.) Put 2 heaping tablespoons of the Pineapple cake batter into each of the molds

4.)Spread the batter out evenly in each of the molds

5.) Put in the oven at the 350 degrees for 8-15 minutes (you'll know they're done when you can stick a toothpick in the center and it comes out clean)

Step 9: Sautéing the Sliced Pineapples

1.) Place a medium sized pan on the stove on low-medium heat

2.) Put 3-4 tablespoons of the pineapple mixture on the pan (try to include mostly the liquid in the mixture)

3.) Spread the pineapple mixture across the bottom of the pan

4.) Place a few pineapple rings on the pan

5.) Put a tablespoon of the mixture on top of each pineapple rings

6.) Cook for about 5 minutes, flipping them back and forth so the heat can be individually distributed on both sides

*You should know when there done when they're yellower and sweeter.

Step 10: Ingredients to Make the Pineapple Glaze

*Pineapple juice

*Confections sugar

(There really is no exact measurements, just your preference)

Step 11: Combining Ingredients for the Glaze

1.)In a medium sized bowl place about 1 cup of confections sugar and 3-4 tablespoons of pineapple juice

2.) Combine ingredients

*You can adjust this by adding more confections sugar or pineapple juice according to your taste and consistency preference

Step 12: Assembling the Pineapple Upside-Down Cake

1.) Place the sautéed pineapple rings first on the plate or wherever you decide to put the pineapple upside down cakes

2.) Make sure the cakes are cooled and place them on top of the pineapple rings

3.) Drizzle your glaze over the Pineapple cakes (shown in the picture)

*The glaze may turn transparent depending on the consistency you want your glaze to be
