Introduction: Mint Chocolate Chip Cupcakes With Nutella Topping
These cupcakes are great for kids and adults alike. They are easy to make and taste great!
This recipe makes 12 regular sized cupcakes.
To make these cupcakes, you will need...
2 eggs
110g butter
225g golden caster sugar
150g self raising flour
125g plain flour
120ml milk
1 teaspoon mint extract
50g milk chocolate chips
150g Nutella
A handful of fresh mint
Pre heat the oven to 160°C (fan)/180°C/350°F/gas mark 4 and lina a 12 hole muffin tray with cupcake cases.
In a large bowl cream the butter and suger together until the mixture is smooth. Add the eggs,one at a time, mixing after adding each.
Combine the two flours together in another bowl. Put the milk into a jug and add the mint extract.
Add half of the flour and half of the milk to the creamed mixture and stir well. Then add the other half of each and mix again. Mix in the chocolate chips and spoon the mixture into the cupcake tray.
Bake for about 25 minutes until they are golden. To check if they are cooked, insert a skewer into the centre of one of the cupcakes, it should come out clean.
After they have cooled down, spread Nutella over the cupcakes and top with a mint leaf.
