Introduction: Monster Waffle Cake

About: Loving mom of two beautiful boys, obsessive compulsive confetti user & passionate foodie!

Yep, that's right! This cake is constructed of Chocolate Chip waffles that have been dipped in milk chocolate and drenched in Philadelphia's New "Milk Chocolate Cream Cheese".  I don't normally like to take short cuts. I would have made the waffles myself from scratch, but in this case, it just wasn't necessary. I used Eggo frozen Chocolate Chip Waffles as the base of the cake and they turned out delicious. I toasted the waffles first, which added a nice texture to the cake. This cake is super easy to make and can be used for any occasion. You can use any kind of waffles you like and homemade would work just as well with endless filling possibilities.

In case you haven't heard of or seen chocolate cream cheese yet, keep an eye out. These bad boys are available in both milk & dark chocolate. Cream cheese is the base for a lot of cake frostings, so this is an amazing new product.

I found these adorable friendly monsters at my local baking supply shop, but you can use any decorations you want.

Step 1: Ingredients

4 Chocolate Chip Waffles or waffles of choice

2 bars high quality milk chocolate

1 container milk chocolate cream cheese

12 Monsters

1 pkg. circle sprinkles

Wax Paper

Cake Stand

Place contents of Chocolate Cream Cheese in bowl to bring to room temperature

Line a plate or baking sheet with wax paper

Step 2: Toast the Waffles

Toast each waffle and set aside

Step 3: Melt the Chocolate

Create a double boiler. Fill a pot halfway with water and bring to a simmer. Lower heat to medium low/low. Place a heat resistent bowl on top and add chocolate. Stir gently until chocolate is melted and smooth.

Remove from heat.

Step 4: Dip Waffles in Chocolate and Freeze

Dip only one side of each waffle.  Place each waffle in the bowl with the melted chocolate and completely cover one side with chocolate. Place waffle on wax paper. Repeat with remaining waffles.

Place waffles in freezer for 30-45 minutes or until chocolate is hardened.

Step 5: Frost the Cake

Remove waffles from the freezer. Place a waffle on the cake stand and spread a layer of chocolate cream cheese on top. Repeat with remaining waffles. Next, frost the cake with the remaining cream cheese.

Step 6: Decorate Cake

Place monsters onto cake and randomly add circle sprinkles. I stood one of my monsters up to make it pop out more.

Step 7: Enjoy Your Waffle Cake!

Be Creative! You can use any waffle and filling you like.

Serve the cake immediately or place in the fridge until you are ready to serve.
