Introduction: NO BAKE OREO COOKIES & CREAM CHEESECAKE

Step 1: OREO CRUST

20 Oreo Cookies

60g Unsalted Butter

Begin by lining a 10inch springform tin with parchment paper. Crush the Oreo cookies in a food processor (or by hand). Add the melted butter and mix well. Pour the Oreo mixture into the springform pan and press into the base to form the crust. Freeze for 1 hour.

Step 2: COOKIES & CREAM CHEESECAKE FILLING

150g Milk Chocolate

400g Cream Cheese

150g Icing Sugar

1tbsp Vanilla Extract

600ml Double Cream

12 Oreo Cookies

Melt the chocolate and leave to cool. Whip the cream cheese, icing sugar and vanilla extract together. Whip the double cream separately before gently folding into the cream cheese mixture. Place 1/3 of the cheesecake mixture in a separate bowl and add the melted chocolate. In a food processor, crush the Oreo cookies and add fold into the remaining cheesecake mixture. Evenly spread the cookies and cream cheesecake mixture on top of the Oreo cookie crust and top with the chocolate cheesecake mixture.

Step 3: CHOCOLATE GANACHE

250g Milk Chocolate

240ml Double Cream (Hot)

Add the hot cream to the chocolate and stir well. Leave to cool completely before pouring over the top of the cheesecake. Chill the cheesecake for 6 hours before running a hot knife around the edge of the tin to release.

Step 4: TOPPINGS

600ml Whipped Cream + 12 Oreos (Crushed)

Oreo Cookies

Melted Chocolate

Pipe rounds of cream on top of the cheesecake and sandwich Oreo cookies between the rounds. Finish by drizzling melted chocolate across the centre of the cheesecake.
