Introduction: Naked Chocolate Peanut Butter Brownie Cake
A good friend of our just finished a 6 year Master's program and we wanted to celebrate! All I was told was that he liked Chocolate and Peanut Butter. I didn't have time to make things from scratch so I patched things together and it turned into a great dessert! In a nut shell it's chocolate cake with peanut butter chips baked in, a brownie between and peanut butter cream cheese icing!
Step 1: Collect the Ingredients
One Box of Chocolate Cake Mix
One Box of Fudge Brownie Mix
Natural Peanut Butter
Cream Cheese Icing
1 bag peanut butter chips
Step 2: Make the Chocolate Cake Per Directions, Add Chips
I added the full bag of chips which made for several chips in each bite of cake. If you don't like the lumpier texture probably half the bag would be good.
Step 3: Bake the Cakes
Using two 9" pans bake the cakes according to directions. Let cool completely and then remove from the pans.
Step 4: Make the Frosting
Empty the tub of frosting into a bowl. Add 1/2 cup of peanut butter to the icing. Mix together with a spatula. Set the frosting aside (do not refridgerate).
Step 5: Make Brownies
Follow the recipe on the brownie mix. There isn't enough mix for two 9" brownie pans so I filled one and just used a small loaf pan for the rest. When the brownies have cooled completely remove from the pan.
Step 6: Whip the Frosting
I wanted the frosting to be fluffier (and I was nervous about not having enough for a good cake to icing ratio) so I mixed it on medium/high speed for about 30 seconds.
Step 7: Add Layer 1 and Ice the Cake
Put the first cake top side down on the cake stand. Add enough icing to cover the top completely. Should use about 1/3 of the icing.
Note: You can use the icing to "patch" the cake if by some crazy chance it had some issues when you tried to remove it from the pan.
Step 8: Add Brownie Layer and Ice
Step 9: Add 3rd Layer and Ice, Enjoy
That's it! I served with vanilla ice cream and really enjoyed it. It was even tastier the next day!
