Nectarine salsa is easy, delicious, and a perfect summer treat to accompany chips, chicken, or fish.  Here's a simple recipe for a delicious nectarine salsa you can eat as-is, or tweak to fit your taste.

Ingredients:
4 ripe nectarines, chopped
1/2 medium yellow onion, finely chopped
1 bunch scallions, chopped
juice of 1 lemon (or lime)
~ 1/4 teaspoon salt (or to taste)
1/8 teaspoon allspice 
1/8 - 1/4 teaspoon chili powder (or to taste)
~1 Tablespoon fresh mint, basil, or oregano, chopped

Chop all your ingredients, mix, and let sit for at least 30 minutes to allow fruit to macerate and flavors to mingle.  Re-taste and adjust seasoning.  Serve with chips, chicken, or fish of your choice, or just eat as a delicious summer salad. 

Keeps well in the fridge for a couple of days.
