Introduction: No-Bake Mosaic Cheesecake

This No-Bake Mosaic Cheesecake is not only beautiful to look at, but super easy to prepare. My friend lost her husband very suddenly over the weekend and here in Greece when a person dies they are buried the next day, so this dessert came in handy as something to quickly make and bring to her house, it was gone in seconds and very difficult to get a quick photo in before it disappeared.

Step 1: Recipe

Crust:

250 grams crackers (graham crackers in the United States, I used Digestive cookies)

113 grams unsalted butter (1/2 cup)

1 Tbs. granulated sugar

Cream:

400 grams cream cheese at room temperature

120 grams sifted powdered confectioner sugar (1 cup) split in half

1 tsp. lemon juice

200 grams whipping cream

Topping:

Various in season fruits, I prefer the softer fruits and used Strawberry, Kiwi and Mango

Supplies:

Spatulas

Mixer

Round 10" / 25cm cake pan

2 Bowls

Step 2: Crust

Take your cookies and crush them finely.

Add the 1 Tbs. of sugar

Melt the 113 grams of butter and add to the crushed cookies, mix well.

Press into a 10"/25cm round cake pan

Place in the refrigerator while you get the filling made.

Step 3: Filling

Take the 400 grams of Room Temp Cream Cheese and whip it with a mixer, add half of the powdered sugar (1/2 cup) and the 1 tsp. of lemon juice.

In a separate bowl place the 200 grams of whipping cream and whip with the mixer (be sure to wash the beaters before whipping the whip cream) as the cream starts to form, slowly add in the other half of the powdered sugar, 1 Tablespoon at a time (1/2 cup) Mix until soft peaks form.

Combine both bowls and slowly fold together with a spatula.

Spoon into the refrigerated crust and smooth over with a spatula.

Step 4: Topping

Take your fruits and wash them well and then cut them in different shapes and place on top!!

Wahla you have a beautiful and super easy dessert to serve at a moments notice, I do like to refrigerated a little before serving so it can harden up a bit, but really you can eat it right away!

Tip: Want to make things even easier, purchase a ready made crust and ready made cool whip, but seriously it is not hard or takes long to make this dessert!
