This Almond Tea Ring recipe is my norwegian grandmas’ passed down to me and it is amazing! It is a perfect treat to wake up to on Christmas morning, with its fragrant aroma and sweet indulgent taste; this one is tried and true, and I hope it can be a new favorite for your family! Note: This is the REAL Almond Tea Ring, not the crusty stuff you can get at specialty stores Enjoy!
Here is what you will need for 4 rings:
Dough:
4 C. Flour
1 C. Shortening
4 tsp. Sugar
2 tsp. Salt
1 Pk yeast
1 C. Milk, warmed
3 Egg Yolks
Filling:
1/2 Pound Almond Paste
1 C. Sugar
2 Eggs
First, dissolve yeast in 1/2 cup of warmed water.
While that is dissolving, mix up your dry ingredients ( flour, sugar and salt.)
Then warm up the milk in the microwave for 30 seconds or so, until it is just warmed. Beat the eggs, milk and dissolved yeast together and mix it with the dry ingredients.
Mix in the shortening and work it together like a pie crust.
Cover the crust with plastic wrap and let it chill in the refrigerator for 2 hours or overnight.
Then make the filling, start by grating the almond paste to get a good consistency, Then add in the sugar and eggs.
After the dough has chilled, cut it into 4 equal parts.
Roll each part out into a snake on a floured surface.
Flatten the snake with a rolling pin.
Place 1/4 of the filling up the middle of the flattened snake and fold each side over to seal.
Then form it into a ring shape.
and bake on tin foil lined baking sheet for 25 minutes at 350 degrees.
And Enjoy!
These are great for freezing! Freeze the other 3 rings on cardboard wrapped in tin foil and covered with plastic wrap. Thaw the other rings for 20 minutes before baking. Great gift for neighbors as well.
