Intro: Olive Garden Tuscan Soup Copycat Recipe

This soup is SO GOOD and super easy to throw together!!  It has become a family favorite and I love making it for company too!

STEP 1: Ingredients

  • 2-26 oz cartons chicken stock
  • 1 c heavy cream
  • 4 large potatoes
  • 1 whole bunch kale
  • 2 lb Italian or Spicy sausage (depending on taste)
  • 1 t salt
  • Crushed red pepper flakes (optional)

Because I don’t like spicy like the rest of my family does, I use the Italian sausage and then I serve the crushed red pepper flakes on the side so that everyone can adjust the soup to their own tastes.

STEP 2:

Saute sausage--I use my dutch oven pan from start to finish.

STEP 3:

Add chicken stock and cream.

STEP 4:

Cut potatoes and add to soup

STEP 5:

Cut up kale (I use my kitchen shears)  Remove and discard the stems.  Add to soup.

STEP 6:

Let simmer for 1 hour or until potatoes are tender.

STEP 7:

Enjoy!

This is so good and easy... I used the Harris Teeter meat department's spicy Italian sausage and it totally rocked! Thank you for sharing, I will make this often.
My dad makes this on special occasion and its sooooo delicious! The only problem is that it takes all day to cook but thatsnot too big of a deal.

I work at olive garden, your recipe is right on. The only differences is that we halve the potatoes then slice them and we don't add the kale until its ready to be served. great instructable
Delicious! I absolutely love that soup! I made my own version but decided to add carrots just for the heck of it!
