Introduction: Pan Paninis

Let's make paninis! What? You don't own a panini press? WHAT kind of MAD person are you??

That's alright, I have a plan.

First and foremost, you have to have a fairly large skillet and a lid small enough to fit inside the pan but bigger than your bread.  If you don't have these things you may just have to improvise.

Step 1: Step 1: Ingredients

Gather your ingredients:

Bread- this can be a roll or bun like I have or simply two slices of bread
Cheese- I suggest soft, spreadable cheese like Laughing Cow
The Fixin's- I went with sliced tomato and white onion
Seasonings- the ever faithful garlic salt and fresh ground pepper
Oil- Olive oil in my case

Step 2: Step 2: Assemble and Cook

Spread your soft cheese on the bun and place your fixin's so they don't fall out.  
Add seasonings- salt and pepper, and close your bun.

Put oil in your pan and turn the heat on to medium-low.  Place your bun in the middle of the oil and take your lid and set it on top.  Then smash that little bun down.

Cook for about five minutes, checking the bottom of the bun every so often to make sure it doesn't burn.  Then flip your bun and turn down the heat to low.  Give it one more smash.  Just like a grilled cheese sandwich it doesn't take as long to cook on the second side. Mine was a short two minutes.

Step 3: Step 3: Eat!

Plate up and serve.  If this is a snack or finger food, use a big knife to cut the sandwich since the bread will be a little crispy and things tend to slide around inside.

But I don't suggest sharing.  These are too good to split!
