Intro: Pancakes

Hi, just sharing my personal recipe for pancakes.
And yes, my camera -sux-.
This batter can also make an alternative to make crepes or to make a nice cake recipe at the end.

STEP 1: The Gathering

First step, get everything together.
For the pancake recipe, you'll need
1 egg, and bowl to seperate the white into.
1 cup flour
1/4 cup flour, seperate from above
1/2 tsp salt
1/2 tsp baking soda
2: 1/2 cup milk
Oil/butter for the pan.
and something to stir it together, I use the rice scoop which baffles my mother why.

STEP 2: The Combination

For pancakes,
Combine the salt, baking soda, flour and the first 1/2 cup of milk.
Stir it well and try to get out the flour lumps.
Crack and seperate your egg, seperating the white into a glass. You only need the yolk for your batter.
Add the yolk to the mix, then add the second 1/2 cup of milk, and the remainder of the 1/4 flour.
Stir it all well and try to get the lumps out of it.

For a fluffy tempura batter,
combine salt, 1 cup flour, 1 cup of milk and 1 whole egg. Stir well and it will look rather runny, but let it chill in the fridge at least one hour, preferably overnight, and it will be perfect.

For a lazy-crack crepe, leave out the 1/4 cup flour and it will spread rather well in the pan, add sugar if want.

STEP 3: The Fry Up

Heat you frying pan to the temperature your comfortable with.
You might want to disable your smokedetector, mine will go off the moment my frying pan hits top temperature.

The batter volume usually makes enough for three people.

STEP 4: Alternate Ending

Alternatively, if you can actually make meringe, use the put asside egg white and make a meringe. For one egg white, I find 3 tbsp of sugar will be quite enough. And serve with either pancakes or the crepes.
Unfortunately, mine fell flat today, and my sister was fed up with me setting off the smokedector to let me finish.


But this is also a good base start to a perfect little mini angle food cake.
Combine the salt, baking soda, 1 cup flour, 1 cup milk, 1 egg yolk and 1/2 tsp of vanila for flavour and 1/2 tbsp of oil.
Make a mini meringe from the one egg white with just 3 tbsp of sugar.
And then combine the two, just by folding, or slowly stiring it in. The mixture will be sticky, runny and a milky cream looking color. Pour it into a mini bundt pan or a small cake pan that has -high- sides, because this -will- expand.
It's also a very quick cooking cake. Cook at your average cake temperature in your oven, but at this size, it won't take longer than half an hour.

Great recipe! I used to make pancakes like this recipe except I used soymilk. The same taste but it's a bit chewier.
hi, does anybody know how to make pancakes without eggs. I was backpacking in austrailia a couple of yrs ago. and in one hostel they had a powdered mixture which you just added water to (and pan fried). Im not sure what ingredients made up the mixture. it was so simple to make these, perfect for breakfast in a rush. Any help would be appreciated!
Well, Woolworths sells those little plastic bottles of pancake mix in the came mix aisle but I can't remember if you just add water... Maybe you have to add eggs, butter and milk but I can't remember... Maybe eggs, butter and milk was from a cake mix?
Not from scratch, no. But your best choice would be either pancakes from a box, or to go to a bulk food store. Not only do most stores sell individual ingredients, but they also sell by weight dry mixes like muffin, cookie and pancake batters.
My mom's only request this Mother's Day was that I make her blueberry pancakes. I used this recipe (but used whole grain pastry flour instead of regular flour and added blueberries), and she loved them! :)
I like to slather peanut butter on my pancakes then put the syrup on!!!! Try it.
these pancakes look just like my dad's pancakes and they taste better!
BTW, foxquarry... Ignore the naysayer. The perfect pancake tastes perfect. Your's look great. The color is more an effect of the oil used and the non-stick pan. A restaurant usually uses a very evenly heated and tempered griddle. That would be nice to have at home, but rather impractical. Great job!
Your recipe seems great, but you might be cooking those at too high a temperature. I've never seen a pancake with a blotchy or patchy cook pattern like that. I'm sure they still taste great, but if you lower the temp down to something like medium low you'll get more of a consistent, restaurant style look.
Hi, thanks for commenting. And they're not actualy burnt, my camera is just that -bad- at color shading. :} The 'burnt' areas are actually a nice toasty brown color, and the frying pan I have to use is horrible too. And I had to do this one handed. Im both cooking and taking the pictures. Im trying to find a video conversion software for asf videos so I can post my funky action shot of one handed pan flipping a pancake.
Most restaurants serve near-raw pancakes. The perfect pancake would be golden brown and ever-so-slightly crispy on the edges. LasVegas' pancakes are burnt. These, however look good.
As much as you insist on insulting my work at every opportunity, Crash. My pancakes were not burnt. You may like your pancakes raw. That's your choice.

BTW: My pancakes looked a heck of a lot tastier than that horrible looking dip...
Except for the fact that anyone would agree that those pancakes were burnt. The fact that you went after me, insulting each of my projects, have half of my comments removed, while your much nastier comments remained. Everyone else who agreed they were burnt you didn't have as much of a problem with. All I ever said was they were burnt, which seems to be generally agreed upon, and suddenly everything I ever say need ridicule. I would say that is an overreaction on your end.
So... Exactly who is "everyone?" What an idiot...
