Introduction: Parsley Sambol
Here is another super easy green healthy recipe which I love to share with all of you'll.
Please note that this is not an Indian chutney. This Parsley sambol goes very well with rice and curries, and an awesome spread for bread and Roti. This can be stored in glass container in the refrigerator for about a week or more.I have not tried it longer than a week because my Parsley sambol vanishes in no time. Some people just chop this and make a salad. Then the leaves are too big and does not taste that good. This is much more tastier as a grinded sambol mixed with desicated coconut. You could also use fresh scraped coconut.
Healthy tips of Parsley
Parsley is rich in many vital vitamins, including Vitamin C, B 12, K and A. This means parsley keeps your immune system strong, tones your bones and heals the nervous system, too.It helps flush out excess fluid from the body, thus supporting kidney function. However, the herb contains oxalates, which can cause problems for those with existing kidney and gall bladder problems.Regular use of parsley can help control your blood pressure. The folic acid in this herb is like a tonic for your heart.Use parsley daily, and you’ll feel relief from joint pain. That’s because the herb has anti-inflammatory properties.
Step 1: Ingredients
Bunch of fresh Parsley
1/3 Dessicated coconut
1/2 Tomato
1/2 Onion
2 Green chillies
Salt to taste
1-2 lime
I ran short of lime :( so used bottle lime juice.Thats why you see a green lime bottle in the picture.Skip this and use fresh limes
Step 2: Clean Parsley
Cut the the stalks and wash .You may take the very tender stalks from the top.
Step 3: Grind
Grind the Parsley.Mix the desicated coconut with hot water and add to the parsley.Keep grinding
Step 4: Chop & Grind
Cut the tomatoes, onions (1/4 of the onion)and green chillies as tiny as you can.Add the other 1/4 of the chopped onions to the grinder.Keep grinding until it becomes very very tiny pieces.Watch out it must not become a paste.
Step 5: Mix
Add the finely cut tomatoe, onions, green chillies salt to taste and fresh lime juice and mix well with your HAND.
Step 6: Enjoy!
