Introduction: Payesh (kheer) Gluten Free

Hello people I'm of student Architecture and hobbyist. I love to explore new materials.

hello everyone, I'm back with my new instructable!!!

This time i am here with an another gluten free recipe, which is "kheer" or "payesh". which is basically a rice pudding from the cuisine of the Indian subcontinent and Iran. This is very healthy and delicious. This is basically an Indian sweet dish which is completely gluten free. It is served as a dessert. so, let's make it and enjoy together.


(1 cup=250ml)

1 litre milk

1/4 cup rice

5 to 6 tablespoon sugar or as required

6 green cardamons- powdered

1 pinch saffron (kesar)

15 to 20 almonds-blanched and sliced

12 to 15 cashews

1 tbsp golden raisins


In a deep pan take milk. simmer it and add washed rice into it.

Add saffron to it.

Simmer over low flame, stirring occasionally till the rice is cooked and milk becomes thick.

When done add sugar, almonds, cashews, raisins and cardamons.

Stir till sugar gets dissolved properly.

Transfer into a serving dish and serve it.

You can serve it hot or chilled.

    I love rice pudding! How many servings does this make? And about how long do you need to cook the rice in the milk for it to get nice and thick?

    hello, as it is heavy in food, so after meal in desert it can serve for 8 to 10 people. and cooking is actually dependent on fats of milk. if you are using whole fat milk than it will take around 30 minutes and if you are using low fat than it will have more watery part so it will take more than 45 minutes, still i would say you should check rice if it is properly cooked or not. you have to cook till rice get cooked and than burn extra milk so it will be thick and with whole fat milk it will be best. plus i would like to suggest you that you should add little amount of ghee while serving. it will taste even better and you can store it too. and and and you can also add khoya( milk product) it will give you more richer taste and thicker pudding. thank you for your valuable review. have a nice day!!!
