Introduction: Pecan Pie Thumbprint Cookies
In this instructable, I will show you how to make Pecan Pie Thumbprint Cookies
Step 1: Ingredients
For this recipe you are going to need
(for the cookies)
2 c all purpose flour
3/4 c butter, softened
1/2 c white sugar
1 egg
1 tsp vanilla extract
1/4 tsp salt
1/4 c packed brown sugar
(for the pecan pie topping)
1 c pecan pieces
2 tbsp half and half
1 tbsp light corn syrup
1/4 c packed brown sugar
1/2 tsp vanilla extract
Step 2: To Start Things Off...
Cream the butter and both sugars together until smooth.
Step 3: Add More Stuff..
Add the vanilla extract and egg to the mixture, mixing thoroughly.
Step 4: Get Out Another Bowl
Combine the flour and salt together.
Step 5: Wet and Dry
Combine the two mixtures together.
Stir until it is combined, but do not over mix the dough.
Step 6: Almost Baking Time!
Form 1 tbsp of mixture into balls and place them on a baking sheet lined with parchment paper.
Press down on the center of each cookie forming the indention to place the topping. You can reshape them if needed.
Step 7: Making the Filling
To make the pecan pie filling, just mix together all of the ingredients together in a small bowl.
Step 8: Fill Them Up!
Top each cookie with the filling.
Step 9: Bake!
Bake in an oven that's been preheated to 350° for 12 minutes.
Step 10: Cool Down
Remove the cookies from the oven and cool on a wire rack.
Step 11: Enjoy!
