Intro: Peppermint Patty Paleo / Keto Coconut Fat Bombs

Here is a little recipe I made up because I like peppermint patties, especially after a meal, but those little patties have a lot of sugar! I am predominantly a paleo eater at home, so I was wondering if I could make some myself, with paleo ingredients. I was thinking the sugary mint candy could be duplicated with some coconut oil and coconut flakes, and it worked pretty well.

Gather your ingredients and tools:

Peppermint Patties:

  • 1/4 cup refined coconut oil
  • 1/4 cup dried, shredded coconut. The brand I've used here is in nice small pieces.
  • 1/2 tsp arrowroot powder
  • 1/4 tsp peppermint oil
  • 1/4 cup chocolate chips - I used Enjoy Life brand, since they are dairy, nut, and soy free (not pictured).

Tools

  • Measuring spoons and cups
  • Small mixing bowl
  • Tupperware

STEP 1: Mix and Freeze Filling

Mix all ingredients, other than the chocolate chips. I use a fork since the coconut oil is usually a bit hard.

Then shape 1"-1.5" patties from the mixture (working quickly since the coconut oil melted from the heat of my hands). I was able to make 8 patties. Put these in the freezer.

STEP 2: Coat With Chocolate

I didn't do anything fancy here, I just melted the chocolate chips in the microwave by putting them in for a minute, and then 15-20 second blasts until they all melted when stirred (Usually I use the double boiler method, but my trusty saucepan was otherwise employed). Then I dipped the filling bites in until they were coated, and then returned them to the container they were in in the freezer.

Keep them in the fridge for a frosty, satiating treat, and enjoy!

I am new to Keto and am always open for any goodies. These mint patties sound super! Is there something else I could use instead of the arrowroot? I would hate to buy a whole bag for such a little amount. Maybe Xanthum gum (?however it is spelled lol) or corn powder? Corn isn't allowed but I don't think a 1/2t will be a deal breaker. I have some sugar free chocolate coming and some almonds so I will be making your Almond Joy goodies next only with simi sweet chocolate. Thanks for the instructable!
