Introduction: (Pi)na Colada
A simple and festive no-bake pie recipe in a cup. A perfect complement to any Pi day celebration!
Ingredients:
2 6 oz. cans of pineapple juice
1 can coconut milk
1 1/2 teaspoons rum extract
1 (3.4 oz) box vanilla instant pudding
1 cup shredded coconut
1 carton heavy whipping cream
1/2 teaspoon vanilla extract
1/4 cup sugar
1 package (12-16) lemon ginger snaps
several large pineapple spears
Step 1: Combine Liquid
In a large bowl, combine nectar, coconut milk, and 1 teaspoon rum extract. Sprinkle pudding mix over liquid and whisk for 2 minutes.
Step 2: Whip Cream
Using an electric mixer, whisk entire carton of heavy whipping cream adding in sugar, vanilla extract and 1/2 teaspoon rum extract.
Step 3: Fold in Whipped Cream
Fold in half of the whipped cream.
Step 4: Crush Ginger Snaps
Crush ginger snaps between waxed paper using a rolling pin.
Step 5: Fill Goblets
Press crumb crust into bottom of goblet. Pour mixture on top of crust. Fill about half the glass. Chill in refrigerator for 3 hours.
Step 6:
Remove goblet from refrigerator. Top with remaining whipped cream and coconut.
Step 7:
Cut pineapple into Pi symbol. Use toothpicks to hold pieces together. Place on edge of goblet and serve!
