Introduction: Pistachio Pudding Ice Cream
This is a custard-like ice cream made from instant pudding mix. The idea is nothing new, but I thought I would give you my version of a quick and tasty dessert.
Step 1: Gather Materials:
One box instant pudding mix, pistachio flavor in this case
About 2 cups milk
About 1/2 cup heavy cream
About 1/4 cup sugar (or less)
About 1 cup shelled and crushed pistachio nuts
Feel free to expirament with the ammounts here. It will probably still taste good.
Step 2: Gather Tools:
A medium-sized bowl
A wire whisk
An ice cream machine
Step 3: Combine Ingredients
Whisk everything together in the bowl. Put this in the fridge to set up while you get out the ice cream machine.
Step 4: Churn and Freeze
Dump the pudding into your ice cream machine. Make sure the core is frozen solid (overnight at least). Churn for about one hour, then scoop into plastic containers and freeze overnight to harden the ice cream.
If you don't have an ice cream machine, try putting the bowl of pudding in the freezer and whisking it very hard every few minutes.

I just had idea the other day. Since eggnog is essentially a sweet, semi-viscous custard similar to ice cream, it would probably be possible to just pour eggnog into an ice cream machine and get something tasty out of it. You might have to add some more sugar or cream or something to get it to come out right. By the way, how was Thanksgiving?

The eggnog thing definitely works. I had the same idea when I realized most of the ice cream recipes I was looking at called for making a custard base that sounded basically like egg nog to me (minus the spices). So I tried it out.
You can take store-bought eggnog, pour it directly from the carton into the ice cream maker. I don't think it's necessary to add anything. I added some nutmeg and cloves and a tiny bit of cinnamon during the churning process (because I was nervous the freezing would dampen the flavor too much). Turned out great if you like store-bought eggnog -- which I do.

You can make Ice Cream from egg nog. I think it tastes alright... not great.

Sweet! I love pistachio ice cream! This would also be great for the banana nut ice cream I keep looking for. The possibilities are endless! Now to get myself an ice cream machine and make some. :D

My son and I made this last night and it was FRICKIN AWESOME! I did double the cream, and cut back on the 2% milk.....but next time I will go w/the original ratio, and bump up the sugar a little bit. And that "next time" will be tomorrow as we ate it all already. The mouthfeel was wonderful. Best ice cream I ever made! Good recipe.

Now I am hooked-at Target today I bought lemon, coconut cream and vanilla flavored pudding. We'll be firing up the ice cream maker this weekend!

Glad you like it. If you like custard-style ice cream, here's another recipe: ~4 egg yolks ~2 cups milk ~3/4 cut sugar ~pinch of salt ~2 cups cream ~1 tablespoon vanilla ~2 bananas, frozen then thawed so they're mushy ~1 tablespoon corn starch (optional) Mix the milk and cream in a saucepan. Mix everything else in a bowl. Heat the milk and cream in a double boiler until warm, then slowly add the other ingredients while stirring. Heat the whole mixture slowly until it reaches about the thickness of paint and will coat the back of a spoon. Chill overnight then freeze it in your ice cream maker.
