Intro: Pizza Bites

Pizza Bite's!!!!

I love pizza, but turning it into a {pizza bite} is the best!...

So let's start making this awesome snack.

Ingredients:
1 recipe of pizza dough
4 oz. mozzarella cheese, cubed (about 20-24 pieces) or shredded mozzarella cheese
Sliced pepperoni

For Topping:
6 tablespoons butter, softened
3 tablespoons minced garlic

Pizza Dough recipe:
1/2 cup warm water
1 1/4 teaspoons active dry yeast
1 1/2 teaspoons honey {or sugar}
1 teaspoons salt
1 tablespoons olive or canola oil
1 1/2 cups bread flour {give or take 1/2 cup}



Yields: 20-24 bites
Preheat oven to 350 degrees.

STEP 1:

In a large mixing bowl, preferably a stand mixer, stir yeast and honey {or sugar, which ever you picked} into warm water. Let sit for a minute. Pour in salt, oil and half the flour and mix.

STEP 2:

Once that flour is mixed in, start adding the other half of flour in bit by bit until you get the pizza dough to the consistency you want. If it sticks to your hands, add more flour.

STEP 3:

Once you get to this point, turn the mixer on high to knead for 6 minutes.
No stopping before 6 minutes!!!!!! Once 6 minutes is up, turn mixer off and take dough out.
The dough should be smooth and easy to work with.

STEP 4:

Lightly grease the bowl and cover with towel or plastic wrap and let it rise 1-2 hours.

STEP 5:

Lightly grease a 9-inch pie pan.
Divide the pizza dough into 20-24 roughly equal sized pieces... (mine i made bigger, thus, you  end up with 12 pizza bites.) (Make them what ever size you want!!)

STEP 6:

Take one of the dough pieces,squish the middle and put 2-3 slices of pepperoni and then a cube of cheese, or approximately 2 tablespoons of shredded cheese, like i did.  Pull the edges of the dough around the fillings and pinch closed.  Place seam-side down in the baking dish.  Repeat with the remaining dough pieces.
Spread the topping mixture (butter and garlic) over pizza bites.

STEP 7:

Bake for 20 minutes, or until the tops are golden brown. Serve warm, and enjoy!!!!!!!

These look awesome! Would you recommend any changes if I wanted to put a little marinara sauce in my toppings?
Thanks!! hmm.... i would either put some on after i baked them or just dip them in the sauce as you eat it. I made these again today and dipped it in pizza sauce and that was good!! I think i like dipping best :)) It would be messier if you poured the sauce on top. So... it's up to you!..

what kind of stand mixer have used?brand, model?
:) it is a BOSCH universal..we got ours like 12 years ago so it's a little old but is still working great!

My sister has the new BOSCH - Model - MUM6N10UC
and i don't like it near as much is i like the older one...
