Introduction: Potato One Pot (vegan+omnivore)

The other day, we left our friends' place around dinnertime, and at the end of our stay, they started to prepare a potato soup for dinner.

I drove home and thought about what to get for dinner and asked my 2 years old "What do you want for dinner?" and he answered <tato soup*>

I asked my friend about the recipe and she sent it to me. They are vegan and so is their food, but lucky me, I had all ingredients at home.

The soup was ready in about 40min and the whole family liked it so much, that I recooked it only a few days later (this time by changing the recipe a bit, and add some sausage add ons).

But in both versions, it is delicious, a warm and filling soul food. Very much recommended.

*well, he actually said, <toffel supp> (=Kartoffel Suppe) since his german is still at the beginning ;-)

Step 1: Ingredients and Material

Ingredients: the measurements don't need to be exact if you want more carrots ex. feel free to change

  • 1,2 kg (2.6pound) potatoes
  • 0,5kg (1.1pound) carrots
  • 200gr (7oz) green peas
  • 2 (red) onions
  • 1 pack smoked tofu
  • 200ml (0.85cup)) plant-based milk (I used oat milk, but last time it was soy milk)
  • 700ml (3cup) vegetable broth
  • salt, pepper, cooking oil
  • opt: cooked sausages
  • opt: chives as decoration

Material:

  • chopping board
  • sharp knife
  • 1 big pot
  • stirring spoon
  • hand blender

Step 2: Chop the Veggies

  • Split the carrots lengthwise in two or four parts, depending on the diameter, and cut them into small pieces.
  • Cut the carrots into small cubes.
  • Chop the onions into even smaller cubes.
  • Chop the chives.

Step 3: Chop the Proteins (in the Right Order)

  • Cube the package of smoked tofu and set it aside.
  • If you will also use cooked sausages, now is the time to cut them too. (If you would cut the ingredients in another order you would need to wash your tools in between to keep it meat free.)

Step 4: Prepare the Tofu

  • Put some cooking oil, approx. 3 tbs into your pot and heat it up.
  • When the oil is hot, add the cubed tofu and let it brown while stirring.
  • When you are happy with the browning level set the tofu aside.

There might be some stick leftovers in the pot, but they will loosen in the next step.

Step 5: Saute the Onions

  • Add 2 tbs of cooking oil into the pot.
  • Add the onions and let them saute while stirring until they are slightly translucent. You might want to add 2tbs of water to loosen the tofu residue, but sometimes it just detaches by itself.

Step 6: Add the Veggies

  • When the onions are translucent then add the potatos and the carrots.
  • Try to fry them a little while stirring.

Really frying is quite difficult since the pot is very full.

Step 7: Make It a Soup

  • Add the vegetable broth to the veggies and let it cook for approx. 20 min.
  • Use the blender to mix half of the veggies. This way you will keep some bits and you still have to chew instead of just swallow the soup.

Make sure you take the pot off the stovetop while blending. The thickened soup will start to make bubbles which will probably burst and spread some very hot soup (you can see the craters in the fourth picture).

While I was blending the soup standing still ON the hot stove plate I was like "ouch, ouch, ouch" and "ouch, ouch" and then the second person in the kitchen said: :-)

Step 8: Finish the Cooking

  • After blending the soup add your frozen peas and continue cooking for about 5min.
  • Add the plant milk and stir well until it is all mixed up.
  • Taste the soup and add some salt and pepper until you are happy.

Your vegan potato one pot is finished.

Step 9: Make It Omnivore

For those who want the meat.

Set the cut sausages on the bottom of the plate and pour the soup over.

This way the sausage will heat up a bit until eating.

Sprinkle the roasted tofu on top. I prefer to keep it on top, so it won't soak and is still a bit crispy while eating.

Spinkle the cut chives on top.

Step 10: Enjoy Your Soup

Enjoy your warm, healthy, and filling soul food, perfect for cold winter days.

All family members liked it very much (even the small ones) and I will cook it again soon.
