Introduction: Potato Pancakes

Potato Pancakes are a tasty dish that can be eaten on its own or as a side. With simple ingredients, these can be made with relative ease. Serving potato pancakes with applesauce and bacon is very popular. These can be eaten for any meal of the day. You may wish to double this batch depending on how many people you are serving and because these tend to be a popular dish.

Supplies

Ingredients:

  • 6 large Potatoes
  • 1 Small Onion
  • 2 cups of Flour
  • 2 Eggs
  • Oil (for frying) or Bacon Grease

Supplies:

  • Large frying pan
  • peeler
  • vegetable chopper
  • Grater or stand mixer with attachment
  • large bowl
  • mixing spoon
  • spatula or large spoon
  • baking pan(optional)

Step 1: Wash Potatoes

Wash your and peel your potatoes. Make sure any extra growths are removed before beginning to peel. If some potato skins remain that is okay



Step 2: Grate Potatoes

Grate your potatoes either using a grater or a grater attachment on a stand mixer. Make sure you have a mixing bowl to place the grated potatoes in.

Step 3: Squeeze Liquid Out

Once done grating potatoes, squeeze the excess liquid out. Use clean hands to press down on the potatoes while tilting bowl to allow excess liquid to run out. This should be done over the sink. Some liquid will remain in the bowl with the potatoes, that is fine. If some of the potatoes fall out of the bowl, do not worry, this will not affect the recipe.

Step 4: Chop Onions

Peel and cut the onions into quarters. Then, using a vegetable chopper, chop the onions until they are very fine. They should look like the image above.

Step 5: Combine Ingredients

In a large bowl combine the grated potato, onion, flour and eggs. Mix using your hands until fully combined.

You may need to add more flour if the batter is not coming together, the batter should look like it does in the image above.

(If you may add salt or pepper at this stage to your liking)

Step 6: Heat Pan

Turn your burner on and place a large frying pan on stove. Once the pan is hot put enough oil in the pan to cover the surface.

(If you are planning to serve with bacon, cook bacon before hand and use bacon grease in place of oil)

WARNING: Do not put oil or grease in a cold pan and wait for it to heat up. Doing this could cause a fire.

Step 7: Fry Pancakes

Spoon out the batter onto the pan. They should be flat, no more than 1/2 inch thick.

Once golden brown, flip and cook the other side. Repeat until all the batter is used.

Hint: If you shake the pan, and the pancakes are not sticking to the pan, they are ready to flip.

Hint: To keep the pancakes warm while cooking, place the pancakes on a foil covered cooking sheet and put in an oven heated to 200 degrees F.

Step 8: Serve

Serve and enjoy your pancakes! The recommended serving is with applesauce and bacon.
