Intro: Prepared Horseradish

I always thought horseradish was a mysterious and mystical substance that wandered around the grocery store in little jars begging someone to love it. Not so. It's actually just a root, and prepared horseradish requires nothing more than a grater, a few pantry ingredients, and (optionally) long arms since horseradish, like raw onions, will go after your nose if you dare to come at it with a grater.

STEP 1: Gather Your Ingredients

8 oz. horseradish root
1/2 c. white vinegar
2 tbsp. water
2 tbsp. sugar
1/2 tsp. salt

STEP 2: Peel & Grate

STEP 3: Measure & Combine Everything

This would look more exciting if the ingredients weren't all white. Store in the fridge overnight in a flavor-proof container like glass. It should keep for up to a month and can be used exactly like the stuff that comes in a jar.

I first learned how pungent horseradish was several years ago when I put some root in a blender, whizzed it and then took a big sniff. It felt like I'd been punched in the face it was so strong. I've made horseradish sauce several times since with a recipe very similar to yours and it certainly peps up the Sunday roast beef.

Just a suggestion : How about a section on recognising and harvesting horseradish.
