Paired with a creamy pumpkin sauce, this dish is perfect for a cosy fall gatherings or a spooky-themed dinner. Whether you’re entertaining guests or enjoying a seasonal treat, this recipe will add a delightful touch to your Halloween festivities!

Supplies

For the Gnocchi:

  1. 600 g sweet potatoes
  2. 100 g plain flour
  3. 1 tsp salt
  4. 1 large egg
  5. 1tsp of cornflour
  6. Pumpkin seeds (for garnish)

For the Sauce:

  1. 1 small munchkin pumpkin
  2. 1 onion
  3. 100 ml milk
  4. 100 ml water
  5. Parmesan cheese to taste
  6. Salt and pepper to taste

Step 1: Prepare the Sweet Potatoes

Preheat your oven to 180°C (350°F).

Cut the sweet potatoes into halves or quarters and place them on a baking tray. Cover with foil.

Bake for 40 minutes, or until the sweet potatoes are soft.

Wait until they are cool down, in the meantime start the sauce


Step 2: Prepare the Pumpkin Sauce

Cut the munchkin pumpkin and onion into small pieces.

In a pan, combine the pumpkin, onion, milk, and water. Season with salt and pepper and add the cornflour.

Simmer over low heat until the pumpkin and onion are soft, about 15-20 minutes.

Use an immersion blender or a regular blender to puree the mixture until smooth. Adjust seasoning as needed

Step 3: Make the Gnocchi Dough

Peel the skins off and mash the sweet potatoes in a bowl until smooth.

Allow the mash to cool completely.

Add the flour, salt, and egg to the cooled sweet potato. Mix until a soft dough forms. If the dough is too sticky, add a little more flour as needed.

Step 4: Shape the Gnocchi

Divide the dough into small pieces

Roll each piece into a small ball, then flatten slightly.

Using a skewer or fork, gently press into the dough to create the grooves of the pumpkin.

Press a pumpkin seed into the top of each gnocchi to create the stem

Step 5: Cook the Gnocchi

Bring a large pot of salted water to a boil.

Carefully drop the gnocchi into the boiling water. They are done when they float to the surface, about 2-3 minutes.

Step 6: Combine and Serve

Once the gnocchi are cooked, drain them and gently add them to the pumpkin sauce.

Toss to coat the gnocchi in the sauce, parmesan cheese and let them simmer together for 1-2 minutes.

Serve hot, garnished with extra pumpkin seeds if desired
