Uzbekistan is known for its delicious, various types of bread. Lochira is Tashkent‘s famous enriched flat bread. It is quick and easy to make.

Ingredients:
Flour - 1 kg
Melted or clarified butter - 200 grams

Milk or water - 500 ml

Baking powder - 2 teaspoons

Salt - 2 teaspoons

Step 1:

You can make the dough my hand or use a stand mixer. Sift 1 kg of flour and 2 teaspoons of baking powder. Add 2 teaspoons of salt and mix. Mixing on low speed, add 500 ml of room temperature milk or water, and 200 gramsof melted or clarified butter. Mix until smooth and elastic. Finish kneading the dough by hand.

Step 2:

Divide the dough into 2 equal parts, shape into a ball, brush with some oil, cover with a towel and let rest for 15 minutes.

Step 3:

Roll each ball into a 4 mm (1/6 inch) thick round. Transfer to a sheet pan, use your fingers to form a thicker border and pierce the center of the dough using a fork or a special patterned tool.

Step 4:

Brush with an egg yolk, sprinkle with sesame seeds, sunflower seeds or black cumin seeds.

Step 5:
