Intro: Quig's Salsa

After years of attempting to make my own salsa and never being satisfied, I was finally clued into the secret to making really good salsa.

You'll need to hunt down the following ingredients:
2 Cans Fire Roasted Tomatoes
1 Can Chipotle Peppers in Adobo Sauce
1 Bouquet of Cilantro
1 Red Onion
2 Cloves Garlic
A Chopper, and bowl.

STEP 1: Make the Base

Throw 2 cloves of garlic, a quarter of an onnion, and about a quarter sized diameter bundle of cilantro into your chopper. Open up your can of chipotle peppers and thrown in anywhere from 1 to 5 peppers. I used 3 and it turned out pleasantly spicy, but your taste will vary.

STEP 2: Will It Blend?

Press the magic button on your chopper and don't stop until you have a paste like consistency, then dump out into your salsa bowl.

STEP 3: Tomato, Tomahtoe

The canned tomatoes are the key to this whole recipe. If you were to use fresh tomatoes, you'd end up with something more like Pico De Gallo, and I'm just not a huge fan of that taste.

Now put your can of tomatoes into your processor. If you prefer chunky salsa, you can skip this step and just add straight to your base, but I like salsa that is a finer consistency. Process both cans of tomatoes and pour into your bowl.

STEP 4: Mix, Dip, Enjoy!

Mix up the ingredients, dip your favorite tortilla chip, and enjoy your delish salsa.
